Documentation

As we started the RC process, Enrico put out a call to arms for docs:

Unfortunately, we didn't get much response to that – primarily since then, we've had PRs doing simple typo/grammar fixes and updates to examples. As such, the documentation is still largely incomplete.

I've put up a TODO list:

I'd like to discuss how we can make momentum on this for the 2.1 milestone, and ask for assistance prioritizing what documentation is targetted first.
